Steve was born and raised in Vero Beach where, while attending Vero Beach High School, he worked at several local restaurants, starting as a bus boy at the Black Pearl and later at Ocean Grill. Moving on to Tango’s, he caught the eye of the restaurant’s owner and chef soon assuming the position of sous chef. While pursuing a culinary degree at Johnson and Wales University’s Charleston, South Carolina, campus, he interned at the Charleston Place Hotel in their award-winning Charleston Grill. Returning to Vero Beach following graduation, he worked at The Moorings Club and then at Orchid Island Golf and Beach Club. His first executive chef position was at Verandah in Ft. Myers, where he worked until he became executive chef at Sea Oaks in 2009.

Joe Biedenharm

Joe Biedenharn, Director of Tennis Joe grew up in Ft. Pierce, Florida. His tennis career started early as his father was an excellent player and got Joe on the courts as a young child. He played collegiate tennis for East Tennessee State University in Johnson City, Tennessee, as well as at Flagler College in St. Augustine, Florida. After graduating, Joe got into teaching and has not looked back. He worked at Sea Oaks in the late 1990s before moving on to The Boulevard Tennis Club. Most recently, Joe worked as the Head Professional at John’s Island Club starting in 2008 before joining Sea Oaks in January 2021.

Joe and his father Jack have had some success in Father-Son doubles. In 1991, they won the Florida State Closed Father-Son title and have competed in six National Senior Father-Son finals. Joe also won the local King of the Hill Open Division title in 2004 and the 50-and over Division of the same tournament in 2018.

Joe and his wife of 29 years, Debbie (who recently retired from work in the Sea Oaks Pro Shop), are parents of two daughters. The elder, Zan, is a graduate of Virginia Tech and currently lives in Charlotte, North Carolina. Daughter Eliza is a junior at Appalachian State University in Boone, North Carolina.

Justin Weiss

Fitness Manager

Justin Weiss, who has been both a Fitness Manager and Personal Trainer, is a native of Jupiter, FL. However, since 2010, he has called Vero Beach home. He holds a degree in Exercise Science and Health Promotion from Florida Atlantic University. Justin has 14 years’ experience in Performance Training of all age groups catering to individual performance and/or health goals. Before joining the Sea Oaks Fitness Center in 2021, he worked in professional baseball as a Strength and Conditioning Coach for 11 years.

Justin decided to leave baseball in an effort to spend more time with his wife, Lisa, and daughters, Lillian and Hannah. His wife, a Vero native, is a Physical Therapist and Athletic Trainer, and has a local practice focused on outpatient orthopedics. Having this lovely family dynamic, Justin has the ability to try to work on different exercises to create more of a direct path of how he want to approach our training sessions.

Experience working with professional, collegiate, and Olympic athletes. Rotational sports emphasis, tennis & golf.
Held position in player development for three professional baseball organizations (St. Louis Cardinals, Tampa Bay Rays, and Miami Marlins).
Specializing in functional movement, rotational sports, program design (Tennis, Golf, and Baseball), injury prevention, post-physical therapy strength programming, and lifestyle/wellness.
Extensive knowledge of strengthening the shoulder complex, elbow, forearm, trunk strength, stability, posterior chain exercise, mobility, and postural exercises.

Approach to training sessions:

The human body is a very complex system.
Training the body in different planes of movement is vital for everyday living.
Essentially, we have to teach the body how to move properly and adapt to avoid limitations.
Using multi-joint exercises is extremely important in rotational sports and everyday activities.
My approach during training sessions @ Sea Oaks is very progressive and safe. We start with ground-based movement and work from the floor to standing. The sessions are designed to educate the client and teach proper technique, and movement in order to accomplish our goals. A basic timeline for the body to go through an adaptation phase, where you are essentially teaching the body what you want it to do, can take anywhere from 6-12 weeks, 2-3 times a week of training.
When working with my clients, I try and work in reverse to try to find out what might be causing certain issues in their routines. A lot of the time, we think we are helping the body with consistent exercise, but sometimes we can develop imbalances of the muscle, and adversely be working against ourselves. I put an emphasis on things to avoid, or what not to do, in order to help guide you in the right direction.
Mobility and self-myofascial release are also important when designing a personalized program. My services provide indirect screening and analysis of movement for the first few sessions.
An emphasis on the posterior chain of the body is extremely important when promoting stability and absolute strength in individuals.
With an emphasis, on sleep, recovery, hydration, nutrition, and fitness activity. We have to create habits for ourselves in order to live a more active lifestyle.
Correctional exercise is also equally important in any training program. With my skill set, I am able to break down the big picture and help design a program that will work best for you.
Another important detail in the training is getting to know you as a person. Where are you from, what motivates you, what do you like to do, family background, where have you traveled, favorite recipes, where have you lived? All of these qualities are just as important to help promote a trusting working relationship to accomplish your goals.

Personal Professional Resources:

In addition to my certifications and skill set, my wife is a doctor of physical therapy (DPT). We converse regularly, being in the same field of work. This gives me the ability to try to work on different exercises to create more of a direct path to how we want to approach our training sessions.
Furthermore, I am required to attain continuing education units to maintain my CSCS certification. Through scientific journals, studies, quizzes, and national conferences, I am able to stay current with certain trends in the industry. It keeps me motivated to learn through each passing year.
In addition, I am still in contact daily with former mentors who are currently Directors of Performance for professional sports teams. We exchange information on a daily/weekly basis.
These resources are invaluable when working with specific clients.
